And why exactly is it called Kaiserschmarrn?

There are many different stories about the name. One of them is that at the request of Empress Elisabeth, the Habsburgs cooked in a figure-conscious way. For this purpose, recipes were created in-house. Among other things, a pancake dough fried in fat and torn into pieces. The empress, however, refused, but her husband, the emperor, loved the new creation and said: “Well, just give me the pancake dough that our Leopold has cooked up again”.

How to make it:

Separate eggs. Whisk flour, salt, sugar, milk and egg yolks in a bowl. In another bowl, beat the egg whites until foamy and firm. Fold the beaten egg whites into the milk mixture well with a whisk. Add the raisins. Then, melt the butter in a large skillet and empty all the mixture into the skillet at once. Fry until golden brown on both sides and tear into small pieces with either a fork or wooden spoon.

And that’s it! As I said, great for quick cooking and sweet tooth!

Last but not least, serve with icing sugar and enjoy as we Tyroleans, quite traditionally, with cranberries.

By the way, the Kaiserschmarrn also tastes super delicious with applesauce and / or stewed plums.
