Innsbruck never stands still: no sooner have we introduced you to the latest exciting new openings (such as Guuzen Ramen, Raed Pizza and Tacheles Bar) than something is happening in the city again. And this time, a very special wind is blowing through Innsbruck's gastronomy scene: it comes from Vietnam, Japan and the realm of teahouses..
Whether steaming phở to go at Viet Spicea carefully prepared matcha at Midori Teehaus or a bowl of ramen at Ichi Go Ichi E in the arches - Asian cuisine is having a real moment in Innsbruck right now. I visited all three restaurants and spoke to the owners. Here you can find out what's behind the concepts - and why it's worth a visit.
Viet Spice
There is a story behind Viet Spice that is as charming as the restaurant itself: Three Vietnamese - including a doctor of pharmacy and a doctor of mathematics - spontaneously decided to open a restaurant during a joint ski trip. The trigger? A longing for the flavors of their homeland, especially traditional beefPho.
What began as a cozy cooking session with Vietnamese students in Innsbruck - initially only at weekends, just for themselves - grew into a real passion over time. And with it the desire to bring authentic Vietnamese cuisine to the international community in Innsbruck. In November 2025, the time had come: Viet Spice opened its doors.
My tip: be sure to order the S2 - a delicious Bún cha, carefully cooked, with a variety of flavors in a bowl.
What should guests definitely try at your restaurant - and why this dish in particular?
We deliberately don't have a large menu with dozens of dishes that often lose their traditional authenticity. Instead, we deliberately keep our selection small - with a maximum of around ten main dishes - in order to guarantee the quality of each individual dish.
Our most popular dish is the traditional Pho Bo (Vietnamese beef noodle soup). This dish has made Vietnamese cuisine famous around the world and stands for its flavors and tradition like no other.
Also Bánh mì, the Vietnamese sandwich, is also a recommendation not to be missed.
We also offer purely vegan dishes. For us, vegan cuisine is not just about combining tofu and vegetables - it is also an important part of our culinary culture. That's why we serve vegan Pho, rice noodles with vegan spring rolls and vegan bánh mì, for example.
Vietnamese cuisine relies heavily on fresh herbs, acidity and balance - what do you place particular emphasis on in your cooking?
In our kitchen, it is particularly important to us that everything is really fresh and that we make it ourselves wherever possible. We consciously say no to tinned food and ready-made sauces. Instead, all ingredients are prepared fresh every day and the dishes are freshly cooked.
We also pay close attention to a good balance of nutrients - in other words, a good ratio of proteins, carbohydrates and fiber. This balanced diet is also one of the reasons why Vietnam has one of the lowest obesity rates in the world.
You can also try our passion fruit juice. This is a taste experience that you rarely find. We use fresh passion fruit and make our own passion fruit syrup. This drink is particularly popular with many of our guests.

Behind the Midori teahouse is a duo that works perfectly together: Zeynep and her husband Yichen - she is the creative force behind the concept, design and product idea, he is the structured business head who makes the whole thing work. What unites the two of them is a genuine enthusiasm for Japanese tea culture, minimalist café design and, above all, matcha in all its facets.
Their shared dream was to take high-quality matcha out of its niche and show how versatile Japanese tea can be - whether traditionally prepared or reinterpreted in a modern way. And you can see that at Midori: it's all heart and soul, from the first idea to the last cup.
My tip: Not a matcha fan? No problem. The chai latte with oat milk is a real discovery - creamy, aromatic and so good that I can hardly go past it without drinking one.
What should guests definitely try at your place and why?
For those who don't like it sweet, definitely the classic matcha latte. If you like it sweeter, you should try the strawberry matcha. And for anyone looking for something refreshing, we recommend our matcha lemonades.
What fascinates you about matcha and Japanese tea culture?
We are particularly fascinated by the tranquillity and mindfulness associated with matcha. At the same time, matcha is incredibly versatile and can be interpreted in a traditional or modern way. This combination is what makes matcha so special for us.

Ichi go Ichi e
Behind Ichi Go Ichi E are two brothers whose passion for Japanese culture knows no bounds - in the most literal sense of the word. The idea for their ramen concept was born during an apprenticeship with a ramen master in Japan, an experience that shaped their view of everything: from the broth to the noodles.
Back in Austria, they developed this knowledge further and turned it into a concept that combines high standards of quality and attention to detail with genuine accessibility. The two now run several locations - and yet nothing has changed in their basic attitude: the passion for ramen is still the focus.
My tip: If you love umami and are in the mood for a hearty broth, you should order Tan Tan Men!
What should guests definitely try at your restaurant - and why this particular dish?
Our guests should definitely try our ramen: They are the heart of our concept. The "Black Garlic" and "Tan Tan Men" versions are particularly popular.
The "Black Garlic" Ramen is a classic for us: strong in taste, but at the same time pleasantly light and very balanced thanks to the broth.
The "Tan Tan Men" goes in a slightly different direction - also intense, but with a creamier broth and a subtle spiciness that gives the dish additional depth. Both show in their own way how versatile ramen can be.
Good ramen takes time and precision - how much work goes into your broth and your ramen noodles?
For us, good ramen is the result of years of experience. Our broths simmer for many hours until the flavors are fully developed. Every little detail determines the taste.
Our noodles are also freshly made; it takes several hours from the dough to the finished noodle - including resting times - so that the texture and bite are just right.
What makes the perfect bowl of ramen for you?
Of course, everyone has their own idea of perfect ramen. For us, the perfect bowl is made up of two things in particular: the broth and the texture of the noodles. For us, the noodles are firm to the bite and their texture absorbs the broth so that the flavors and consistency complement each other.
Then there are the toppings: they bring additional flavors, textures and freshness that harmoniously complement our broth and noodles without disturbing the interplay of the main components.
